That’s right, this month we are very excited to be including a wine from the famous Chablis region in Burgundy! Chablis is one of the most revered wine regions in the world, celebrated for producing some of the purest expressions of Chardonnay. This northernmost part of Burgundy is renowned for its unique terroir, a mix of clay and limestone enriched by 180 million years of fossilized oyster shells. This ancient soil contributes to Chablis’ hallmark minerality, often described as gunflint, chalk, or wet stone, which sets these wines apart from Chardonnays produced anywhere else in the world. The richness of the Kimmeridgian soil, combined with the region's cool climate, nurtures the grapes to perfection, resulting in wines that are both crisp and complex

The Vocoret family has been growing vines for over four generations, and their commitment to tradition is evident in both their viticulture and winemaking. They own 47 hectares of vineyards, including an impressive 15 hectares of grand cru plots. Uniquely, Domaine Vocoret still ferments their wines in large neutral oak foudres, a practice shared by only a handful of producers in Chablis. This method adds a layer of complexity and richness to the wine without making the wine “oaky”, which is then transferred to stainless steel vats for 12 months doubling down on the steely qualities of classic Chablis.

The 2022 Domaine Vocoret Chablis is a quintessential example of what makes these wines so extraordinary. With focused citrus notes, firm acidity, and that unmistakable minerality, it delivers everything a classic Chablis should. The limestone-rich soils, mixed with Portlandian clay on the vineyard’s chalky hillsides, give this wine its backbone along with flavors reminiscent of wet stone. Its firm acidity and focused citrus expression make it ideal to serve as an aperitif or paired with oysters, seafood, escargot, charcuterie, or cheeses from goat’s milk and cave-aged Gruyère.
