Robert Chevillon “Bourgogne Passetoutgrain”

Domaine Chevillon, established in the nineteenth century by Symphorien Chevillon, is among the most respected producers in Burgundy, a reputation earned through the consistently high quality of its wines. It is now run by the fourth generation of Chevillons, Denis and Bertrand, who took over from their father Robert when he retired in 2003.
Passetoutgrain combines the structure and depth of pinot noir with the light, fruity elegance of gamay (the blend is about one-third pinot noir and two-thirds gamay). While many top producers rip out gamay vines to plant pinot noir, which is more profitable, some continue to make this traditional style of wine. Passetoutgrain is a delicious bottle to drink now, one that can be enjoyed while waiting for premier cru and grand cru Burgundies to evolve. The grapes for this Passetoutgrain are sourced from three lieux-dits near the village of Nuits-Saint-Georges (Champs d’Argent, Croix Blanche, and Petit Chaliot) and has the hallmarks of the domaine’s classic style. The wine is bottled after around 16 months of aging.
Fresh and fruity, the nose shows notes of cherry, cranberry, hibiscus, anise, sous-bois, and a hint of rosemary. The tannins are moderate, and the acidity is bright and refreshing. Pair this wine with pot-au-feu, oeufs en meurette, or beef or pork brochettes. Serve slightly chilled, around 50–55 degrees Fahrenheit.
